Prep the bananas

Peel the bananas and cut them in half lengthwise. If using larger bananas, you can cut them into thirds or even quarters for easier rolling.

Sweeten it up

In a shallow dish, prepare your sugar coating.  Add brown sugar and a sprinkle of ground cinnamon (if using) for extra flavor.

Wrap it tight

Lay a lumpia wrapper on a flat surface with a corner pointing towards you. Place a piece of the sugar-coated banana in the center, near the corner closest to you.

Heat the oil

Pour cooking oil into a large pan or wok and heat it over medium heat to around 350°F (175°C). You can check the temperature by dropping a small piece of the wrapper into the oil.

Fry to perfection

Gently place the lumpia rolls one at a time into the hot oil. Fry for 2-3 minutes per side, or until golden brown and crispy.

Serve and enjoy

Let the lumpia cool slightly before serving. You can enjoy them plain, drizzled with honey or caramel sauce, or with a scoop of vanilla ice cream for an extra decadent treat.
